The base of this blend is the fudgey, rich Las Damas, a Peruvian coffee from a group of female producers in the mountainous terrain in the San Ignacio region of the Peru. We visited this cooperative last year during our exploratory trip to Peru and look forward to continuing to develop this relationship. We paired this with another South American bean from Finca Santa Barbara in Colombia, utilizing this brighter coffee to add a pop of acidity to the espresso blend. In a similar mindset to Unicorn Blood, we love to have a full-bodied shot of espresso with beautiful crema and a brightness in the cup, a combination that we keep in balance to pair well with milk in espresso beverages.
